This is where I share new recipes that are specifically vegetarian and/or at least red meat-free and share with you my readers my personal story of my success in changing my current diet into a healthier Mediterranean-vegan diet. It will be about spirituality, love, how-to’s, and other musings that I might wish to mutter about that I feel will help others too in growing and improving themselves.
I have recently started taking a nutrition class as part of my core requirement classes for becoming an RN and I can tell you I have already learned so much after the first class and in reading the first three chapters of our book. In fact, even with the first project I noticed how much of the naughty foods I was over-consuming – but more on that in my regular posts.
So here, I will be sharing not only some of my success and hopefully only a few failure stories in my attempts to eat a healthier lifestyle and what it has actually ‘done’ to me and my body, soul and being.
My personal goal is to lose weight, have better energy, improved memory among a few other important goals. I started this year with a whole new outlook at life and only wish to continue on this better path…hopefully what I share will help others make correct choices for them.
